Extract English Text From JPEGs

I have a set of JPEG images that contain clear, printed English text. I need every word captured accurately and supplied back to me as a single plain-text (.txt) file. The images are straightforward—no handwriting or mixed layouts—so an OCR tool such as Tesseract, ABBYY, or an equivalent should make quick work of them, but I expect a human pass afterward to fix any recognition errors and preserve all original line breaks, paragraph spacing, and punctuation exactly as shown. Deliverable: • One UTF-8 encoded .txt file containing the fully proof-read transcription of all images, in the order I provide them.
